68. Some consequences of dairy products

I discovered that milk does not contain the enzyme lactase, which is essential for digesting its natural sugar. Yet what surprised me most was the impact of caseins, which seem to be at the root of many disturbances. These milk proteins bear a striking resemblance to gliadin-α, one of the components of gluten. When the intestinal wall becomes too permeable, these molecules circulate freely in the blood and cross the blood-brain barrier, which normally protects the brain and central nervous system. This abnormal passage causes mild inflammation and disrupts neurotransmitter production, which can lead to various neurological problems, an unbalanced distribution of neurotransmitters and disorders of neurological development.
